Beef and Broccoli Stir Fry

- Cook white rice
- Thinly slice the broccoli and ginger
- Quarter the bok choy
- Roughly chop the garlic and chillies
- Slice flank steak into desired size for stir fry
- Coat flank steak in soy sauce, shaoxing wine, bicarb soda, and cornflour
- The flank steak marinade should not be too runny, just enough to cover the meat
- Allow the flank steak to marinate for no more than 5 minutes
- To make the stir fry sauce combine oyster sauce, shaoxing wine, soy sauce, white vinegar, sugar, and black pepper
- Turn heat to high and allow pan to get screaming hot
- Add vegetable oil and stir fry ginger, garlic, and chillies until fragrant
- Add flank steak, spread around the pan and sear for a minute on each side
- Add broccoli and bok choy and stir fry for a minute
- Add stir fry sauce to the pan and toss to coat
- If required, use a cornflour slurry to thicken the sauce to desired consistency
- Serve on a bed of cooked white rice
