- Season both sides of your favourite cut of skin on chicken with sesame oil and salt
- Slice ginger into rounds, don't worry about peeling
- Peel garlic and keep them whole
- Slice spring onions into reasonable lengths and split them in half length ways
- Wash white rice until water runs clear
- Transfer washed white rice into rice cooker
- Lay ginger rounds, peeled garlic, and sliced spring onions on top of white rice
- Lay seasoned skin on chicken on top of aromatics and rice, skin up
- Add high quality chicken stock to rice cooker
- Turn on rice cooker
- Peel and roughly chop some more ginger and spring onions in roughly equal amounts
- Add the ginger and spring onions into a mortar and pestle to roughly crush
- Heat some vegetable oil in a pan until shimmering
- Pour hot oil over ginger and spring onions and mix
- Season ginger spring onion sauce with salt, soy sauce, and sesame oil
- Cut cucumber diagonally
- When white rice is complete, transfer skin on chicken out of the rice cooker
- Serve white rice with sliced skin on chicken topped with ginger spring onion sauce and sides of cucumber slices
