Peking Duck Pancakes

  1. Put the kettle on the boil
  2. Measure out 1 cup of all purpose flour
  3. Remove 2 tablespoons of all purpose flour and add 2 tablespoons of cornflour
  4. Add a pinch of salt and give the mixture a quick whisk to incorporate
  5. Add 1 cup of just boiled water to the flour mixture and mix until a dough forms
  6. Knead for a few minutes until the dough is smooth
  7. Cover with cling wrap and rest for about 30 minutes
  8. Roll the dough into a cylinder and divide into 8 evenly sized pieces
  9. Roll the pieces into balls
  10. Flatten two balls slightly, generously brush some sesame oil onto one side and roll them out one on top of another
  11. Place on a piece of baking paper and repeat with all the dough
  12. Steam the pancakes for 3 minutes each
  13. Carefully seperate the pancakes before they fully cool down
