Peking Duck Pancakes

Instructions
- Put the kettle on the boil
- Measure out 1 cup of all purpose flour
- Remove 2 tablespoons of all purpose flour and add 2 tablespoons of cornflour
- Add a pinch of salt and give the mixture a quick whisk to incorporate
- Add 1 cup of just boiled water to the flour mixture and mix until a dough forms
- Knead for a few minutes until the dough is smooth
- Cover with cling wrap and rest for about 30 minutes
- Roll the dough into a cylinder and divide into 8 evenly sized pieces
- Roll the pieces into balls
- Flatten two balls slightly, generously brush some sesame oil onto one side and roll them out one on top of another
- Place on a piece of baking paper and repeat with all the dough
- Steam the pancakes for 3 minutes each
- Carefully seperate the pancakes before they fully cool down
