Smash Burgers

- Mix 3-star beef mince, salt, pepper, and onion powder in a bowl
- Form 3-star beef mince mixture into 100g balls
- Slice lettuce thinly and combine with a small amount of mayonnaise
- Finely dice white onion and set aside in some water
- To make burger sauce combine mayonnaise, american mustard, tomato sauce, diced pickles, sugar, and a touch of paprika
- Season burger sauce with salt, pepper, and onion powder to taste
- Heat pan to high heat and once screaming hot, smash 3-star beef mince balls into patties directly on the pan
- Cook on high for 2 minutes and then flip the patties
- Place burger cheese on top of the patties in the pan, and cook for another minute
- Turn off the heat and remove patties from the pan
- Using the residual heat, toast the brioche buns
- Strain the white onion
- Assemble the smash burgers as you see fit with the brioche buns, burger sauce, patties, lettuce, white onion and pickles
